Ingredients

cup
cottage cheese
1
cup
rolled oats
1
tbsp
baking powder
or baking soda
2
eggs
1
tsp
vanilla extract
Optional Toppings
Maple syrup
Nuts and seeds
Hemp hearts
Greek yogurt
Peanut butter
Fresh fruit
berries, bananas, peaches
Instructions
Add all the ingredients into a blender. Blend for about one minute until smooth. The mixture will be fairly thick.
Lightly coat a large nonstick pan with cooking spray and heat on the stovetop over low heat.
Scoop about a quarter cup of batter per pancake into the pan. Allow your pancakes to cook on low for 2-3 minutes.
Once bubbles are forming on the top of the pancakes, flip them over. Cook the underside for a minute or so longer until golden brown.
Repeat, spraying the pan with cooking spray each time until there is no batter remaining.
Once all the pancakes are cooked, top with any optional toppings and enjoy!
Notes
Keep the pancakes warm in an oven-safe dish inside the oven at 150ºF until they’re ready to serve.
