This dietitian makes these air fryer roasted peppers on the regular and I’m sure you will too once you’ve tried them! Peppers are one of my favourite vegetables. One, because they’re delicious, and two, because they’re versatile and usually pretty simple to prepare.
As a strategy for healthy eating, I always try to include vegetables with my meals. Salads are a great way to include vegetables but sometimes, preparing a salad alongside my dinner can just seem daunting. So, if you need something quick and easy, this is the recipe for you.
What kind of peppers should you use?
Sweet long peppers ‘twister peppers’ – These are my favourite kind of peppers to use for this recipe because they are so flavourful.
Bell peppers – another great choice because they’re easier to find, and are also very flavourful, especially during peak season (July-September)!
And don’t forget to use a variety of colours to keep it fun and flavourful!

Ingredients
This recipe comes together with just 3 simple ingredients!
Peppers of choice – I hope you love peppers, because they hold the spotlight in this recipe!
Olive oil – Adding a drizzle of olive oil helps the peppers cook to perfection.
Sea salt – to bring out all the flavours.
How to make air fryer peppers
Prepare the peppers. Wash your peppers and remove the seeds.
Slice your peppers into long pieces that are about 1 inch thick. Place the sliced peppers in your air fryer and drizzle with olive oil.

Air fry the peppers at 390ºF for 10-12 minutes. Give them a shake halfway through to make sure they all get cooked well.
Let cool and sprinkle with some sea salt. Enjoy!
How to store air fryer peppers
Once cooled, you can store your peppers in a container in the fridge for up to 5 days.
Serving/Pairing
You can do just about anything with these air fryer roasted peppers. Use them however you want, I’ve included a few ideas below for some inspiration.
Enjoy on a sandwich – grab a fresh bun and fill it with your air fryer roasted peppers, some chicken, goat cheese, arugula and a drizzle of balsamic glaze.
Add to a salad – These peppers are delicious in a spinach salad with some goat cheese, basil, and a balsamic dressing… yum!
