Preheat the oven to 425ºF.
Slice the carrots in half widthwise then quarter them lengthwise then add the carrots to a large baking dish. To a small bowl, mix together the honey, olive oil, garlic, salt and pepper. Drizzle the mixture over the carrots and toss to combine.
Roast the carrots for 40 minutes tossing halfway to make sure the carrots cook evenly.
While the carrots are cooking, spread the goat cheese in an even layer to coat the bottom of a medium-sized serving dish. Alternatively, you can crumble the goat cheese on top of the carrots once they’re finished roasting.
Once the carrots are finished cooking, layer them onto the goat cheese and garnish with parsley and pomegranate seeds. Serve and enjoy!
