Honey Roasted Carrots with Goat Cheese

Ingredients

  • 3 lbs large carrots peeled
  • ½ cup goat cheese
  • 3 Tbsp honey
  • 1 Tbsp olive oil
  • 2 cloves garlic minced
  • Salt & Pepper

Optional garnishes

  • pomegranate seeds
  • fresh parsley chopped

Instructions

  • Preheat the oven to 425ºF.
  • Slice the carrots in half widthwise then quarter them lengthwise then add the carrots to a large baking dish. To a small bowl, mix together the honey, olive oil, garlic, salt and pepper. Drizzle the mixture over the carrots and toss to combine.
  • Roast the carrots for 40 minutes tossing halfway to make sure the carrots cook evenly.
  • While the carrots are cooking, spread the goat cheese in an even layer to coat the bottom of a medium-sized serving dish. Alternatively, you can crumble the goat cheese on top of the carrots once they’re finished roasting.
  • Once the carrots are finished cooking, layer them onto the goat cheese and garnish with parsley and pomegranate seeds. Serve and enjoy!
