Step-by-step instructions

  1. Preheat the oven: Set your oven to 425ºF. 
  2. Prepare the carrots: Slice the carrots in half widthwise then quarter them lengthwise. Place them in a baking dish and add in the honey, olive oil, garlic, salt and pepper. Toss to combine.
  3. Roast the carrots:  Bake for 40 minutes tossing halfway to make sure the carrots cook evenly. 
  4. Prepare the goat cheese: While the carrots are cooking, spread the goat cheese in an even layer to coat the bottom of a medium-sized serving dish. Alternatively, you can crumble the goat cheese on top of the carrots once they’re finished roasting.
  5. Assemble: Once the carrots are finished cooking, layer them onto the goat cheese and garnish with parsley and pomegranate seeds. Serve and enjoy!
