How to make cottage cheese oat pancakes

Gather your ingredients, and add all the ingredients into a blender.

Blend for about one minute until smooth. The mixture will be fairly thick.

Lightly coat a large nonstick pan with cooking spray and heat on the stovetop over low heat.

Scoop about a quarter cup of batter per pancake into the pan. If you find that the batter isn’t spreading, use a spatula to spread out the batter into a circular shape if needed.

Watch your pancakes closely. When they start to bubble on top, it’s time to flip! Cook the underside for a minute or so longer until it’s a nice golden brown colour.

Repeat, spraying the pan with cooking spray each time until you’ve used all your batter.

Once all your pancakes are cooked, top with any optional toppings and enjoy!

Keep your pancakes warm

Whenever I make pancakes, I like to keep them in the oven until all my pancakes are cooked. To do this, preheat your oven to 150ºF and keep your pancakes warm in an oven-safe dish inside the oven until you’re ready to serve them.

Can I freeze these for later?

Of course you can! If you want to make cottage cheese oat pancakes and freeze them for another time, allow them to cool, and add them to a freezer bag, or airtight container. Place them in the freezer and store for up to 3 months!

Whenever you choose to eat your frozen pancakes simply put the pancakes in a microwave safe dish and microwave for 45-60 seconds. Top with your favourite toppings and enjoy!

  • 1 cup rolled oats
  • 1 tbsp baking powder or baking soda
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  • Add all the ingredients into a blender. Blend for about one minute until smooth. The mixture will be fairly thick.

  • Scoop about a quarter cup of batter per pancake into the pan. Allow your pancakes to cook on low for 2-3 minutes.
  • Once bubbles are forming on the top of the pancakes, flip them over. Cook the underside for a minute or so longer until golden brown.
  • Repeat, spraying the pan with cooking spray each time until there is no batter remaining.
  • Once all the pancakes are cooked, top with any optional toppings and enjoy!

Notes

Keep the pancakes warm in an oven-safe dish inside the oven at 150ºF until they’re ready to serve.
