Combine the Wet Ingredients: In a separate medium-sized bowl, mix the pumpkin puree, eggs, maple syrup, melted coconut oil, and vanilla extract until smooth.
Mix Dry and Wet Ingredients Together: Pour the dry ingredients into the wet ingredients and gently mix until just combined. Be careful not to overmix, as this may result in dense and tough muffins.
Fill the Muffin Tin: Scoop the batter into the prepared muffin tin, filling each cup about ¾ full.
Bake the Muffins: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the centre of a muffin comes out clean.

Maple Pumpkin Muffins
Ingredients
- ⅓ cup canola oil
- 2 eggs
- ½ cup maple syrup
- 1 cup pumpkin puree
- 1 tsp vanilla extract
- 1 ¾ cup oat flour
- 1 tsp baking powder
- ½ tsp sea salt
- ½ tsp pumpkin pie spice
Instructions
- Preheat the oven to 350ºF.
- Prepare a muffin tin by coating it with pan spray. Set aside.
- Combine all the wet ingredients including the canola oil, eggs, maple syrup, pumpkin puree, and the vanilla extract in a large bowl. Whisk until smooth.
- Combine all the dry ingredients including the oat flour, baking powder, sea salt, and pumpkin spice in a medium sized bowl and whisk until combined.
- Pour the dry ingredients in with the wet ingredients, and mix together until just combined.
- Scoop the batter into each cup of the prepared muffin tin until filled ¾ the way full.
- Bake the maple pumpkin muffins at 350ºF for 18-20 minutes until a toothpick inserted into the centre comes out clean.
- Allow the muffins to cool for 5-10 minutes then serve!
Notes
- If you don’t have a nut allergy, fold in a 1/2 cup pecans or walnuts to add a nutty crunch
- To make your own pumpkin spice, mix together: 3 tbsp ground cinnamon, 2 tsp ground ginger, 2 tsp nutmeg, 1 ½ tsp ground allspice, 1 ½ tsp ground cloves
