This maple pecan granola is incredibly simple, you’ll have it ready in just 3 simple steps!

  1. Mix the ingredients. Add all of the ingredients to a large bowl and mix with a large spoon or spatula until well combined.
  2. Spread it out evenly. Pour the granola mix onto a large lined baking sheet and spread it out evenly to make sure all your granola gets cooked!
  3. Bake and shuffle. Pop it in the oven and bake at 350F for 20 minutes until lightly browned. Make sure to shuffle the granola halfway to make sure all your clusters get nice and golden-brown.

There are so many ways to enjoy  maple pecan granola, here are a few of my favourites:

  • With Greek yogurt – Layer it onto a Greek yogurt parfait with some fruit for a protein-packed, nutrient-dense breakfast.
  • On top of oatmeal – Give your oatmeal an extra crunch by topping it with some granola!
  • In a bowl with some milk – A classic way to enjoy your granola. Add your milk of choice for a simple healthy cereal.
  • As a snack – Those crunchy clusters are perfect for snacking on their own! 

Tips and tricks for perfect granola:

  • Switch up the add-ins: Customize this recipe by adding in other nuts, seeds, or dried fruit like cranberries, walnuts, or flax seeds.
  • Don’t stir too often: If you love crunchy clusters, make sure not to stir your granola too often while it’s baking. Once it’s finished baking, allow it to cool completely before breaking it into pieces.

You can store your maple pecan granola in an air-tight container at room temperature for 1-2 weeks. Another great thing about this recipe is that you can freeze it! Double or triple this recipe, store it in an airtight container or freezer safe bag and pop it in the freezer for up to 2 months.

Ingredients

  • 3 cups rolled oats
  • 1 cup pecans whole
  • ½ cup pumpkin seeds
  • ¼ cup hemp hearts
  • ¼ cup uncooked Quinoa
  • 1 tsp cinnamon
  • ¼ tsp sea salt
  • ½ cup maple syrup
  • 1 egg white
  • cup canola oil
  • 2 tsp vanilla extract

Instructions

  • Place a rack in the centre of the oven and preheat to 300 degrees F. Line a large rimmed baking sheet with parchment paper.
  • In a large bowl, mix together the oats, pecans, pumpkin seeds, hemp hearts, uncooked quinoa, cinnamon, and salt until combined. Add in the maple syrup, egg white, canola oil, and vanilla and stir to coat the dry ingredients.
  • Carefully spread an even layer of the mixture onto a large parchment-lined baking sheet and press with a spatula. Bake for 20 minutes. Remove it from the oven and carefully shuffle the granola with a spatula. Rotate the pan 180 degrees, place it back in the oven, then bake for another 15 to 20 minutes until the granola is golden brown.
  • Place the baking sheet on a rack to cool completely. Break into clusters and enjoy!
